Pumpkin Spaghetti

I gave this to my kids last night and told them it was macaroni cheese, but with spaghetti instead, and they loved it!  Little did they know it was actually made from pureed pumpkin!!   Love it!   We had no macaroni at the time of cooking this so I had to use spaghetti but the kids still went for it;  even my 3 year old who is the pickiest eater at dinner time had TWO servings – that is UNHEARD OF.

Another one from Super Healthy Kids – best website for healthy kids food!  I changed it up a bit but it still worked, so here’s my version – chuck it with macaroni and you have a sneaky way to get veges into the kids while leaning on the old Mac n Cheese fav:

  • 1 box (13.25 oz) pasta
  • 1 Tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 cup pumpkin puree
  • 1 cup plain Greek yogurt
  • 1 cup vegetable stock
  • 1/2 cup grated cheddar
  • 1/2 cup whole wheat Italian breadcrumbs (you can also use plain or panko)
  • salt and pepper to taste
  • bunch of spring onion
  1. Cook pasta al dente, according to package directions.
  2. Turn oven on 170 C grill
  3. Heat 1 tablespoon olive oil and butter over medium heat in a large sauce pan or dutch oven. Add onion and garlic and saute for a few minutes until the onion is translucent.
  4. Add the pumpkin puree and Greek yogurt, stir until smooth, cooking for a minute.
  5. Turn the heat down to medium low. Pour in the vegetable stock, stir until smooth, cooking for 3-5 minutes.
  6. Chuck in the grated cheese. Stir until melted. Season with salt and pepper to taste.
  7. Add cooked pasta and chopped spring onion to sauce, tossing gently to combine.
  8. Top the macaroni with a bit more grated cheese, and breadcrumbs.  Grill for a few minutes minutes and serve.
