To celebrate daylight savings we had our first BBQ of the Summer in the weekend. I made the yummiest barbequed veges – such a simple recipe and always goes down well with the whole family. It’s such a pleasure to be outside eating again!
This is a really basic recipe, with just a few ingredients –
- 1/4 cup of Olive Oil
- 2 Tablespoons of Balsamic Vinegar
- A few sprigs of Thyme
- Salt and pepper
Chop up a load of varied vegetables. Mix together the above ingredients in a bowl and chuck the veges into the bowl and mix them around to coat in balsamic mixture. Pour veges onto BBQ and cook, turning often. Don’t overcook the veges, they taste best when still a bit crunchy.
